Tomato and Pesto Tart

This is a superb tart, very quick and easy to do for lunch, especially as it uses ready-made puff pastry and also uses up some of those tomatoes!

TOMATO AND PESTO TART

375g ready-rolled puff pastry
3 large tomatoes - thinly sliced
3 tbsps pesto
2 tbsps mascarpone
2 tsps tomato puree
1 garlic clove - crushed
1 tsp oregano (dried)
Sprinkling of parmesan
Salt and pepper

Heat the oven to 200C/fan 180C/gas 6. Unroll the pastry onto a baking sheet and score a border 1cm from the edge. Prick inside the border with a fork, then bake for about 15 minutes until light golden.



Gently squash down the middle. Mix the mascarpone, tomato puree and garlic in a small bowl.  Spread the pesto inside the border, dot over the mascarpone mixture, then layer the tomato on top. Sprinkle over with th parmesan. Season. Bake for 10 minutes until the tomatoes are cooked and the marscarpone has melted.
Serve with rocket salad.

  2. Yes it's lovely, so easy. We had it for lunch today, and there's loads left! Trying to use up all the tomatoes that keep arriving in the kitchen! Definitely worth trying. GG
