Fête de la Chandeleur/Pancake Day

The 2nd February is Pancake Day in France so having had friends over for dinner last evening, the obvious choice for dessert was pancakes/ crêpes.

Brittany is most associated with crêpes as a local speciality and it is from there that the tradition of drinking cider with them comes from.  So these days no matter where you are in France at Chandeleur it’s common to accompany your crêpe with a bowl of cider!
 
 

Mascarpone and Ricotta Pancakes with Rum-Steeped Strawberries

This is a Nigella recipe which I had not done before, but will certainly do again as they were very good!


This recipe serves 6:

Ingredients:

Strawberries:

500g fresh Strawberries
2 tbsps caster sugar
2 tbsps Rum

For the pancake filling:

2 tbsps melted butter
1 tbsp rum – plus 1 tsp
250g mascarpone
250g ricotta
1 egg
50g caster sugar
Zest of 1 lemon
½ tsp vanilla extract
8 crêpes /pancakes – either homemade or shop bought ones

Method:

Preheat the oven to 180 C.

Dice the strawberries then put them into a bowl and sprinkle with the 2 tablespoons of sugar and 2 tablespoons of rum.  Cover with clingfilm and leave to macerate.

Lightly brush an oven proof dish with melted butter.  To the remaining melted butter add a teaspoon of rum and set aside.

Beat together the ricotta and mascarpone until combined, then add the egg followed by the sugar, lemon zest, vanilla extract and a tablespoon of rum.

Lay out one of the pancakes and dollop a good spoonful into the middle, then fold the top and bottom of the pancake over and then the sides over into a parcel.  Place into the dish folded side down and continue with the remaining pancakes.

Brush the tops of the pancakes with the melted butter and rum mixture.


Put in the oven for 20-25 minutes and when cooked they will have puffed up and set inside.

Let them stand for a minute or so and then carefully take out onto a serving plate and spoon over some of the rum-soaked strawberries on the top and serve!
