Sweet Potato and Halloumi Bake
I had some halloumi in my fridge to use up and after searching online found this recipe and so pleased that I did! It was really lovely and is now one of my new favourites.
I did tweak it a bit and add and change a few things and it was quick to prepare and I had it with a lovely green salad - first lettuce of the year from my greenhouse! You can add whatever veg you have in the fridge.
This recipe will serve 2
Ingredients:
1 pack of halloumi - sliced
1 sweet potato (medium sized) - peeled and diced
1 yellow pepper, deseeded and diced
1 red pepper, deseeded and diced
1 red onion diced - I didn't have a red onion so used a large shallot
2 cloves of garlic - sliced in half
2 sticks of celery - diced
Chopped parsley and basil
Salt and pepper
Olive oil
Method:
Preheat the oven to 200 C/180 fan
Place all the ingredients (except the halloumi) into an oven proof dish drizzled with olive oil and roast for 45 minutes.
Preheat the grill.
When the vegetables are roasted, take the dish out of the oven and top with the sliced halloumi. I added a touch more seasoning on top of the halloumi along with a few drops of piri piri sauce (opt).
Grill for approximately 5 minutes until the halloumi is golden.
Serve with salad and bread.
