Mushrooms with Goats Cheese
As you know, I love mushrooms and this is a quick and easy recipe that I've developed to use up the biggest mushrooms that I could buy with some ready made/ready to cook breaded goats cheese. With rocket from the garden, which I am still picking and its doing really well, along with a small jar of ready made tomato sauce (shame!). You could serve this smaller as a starter, but I had this as my main course!
Ingredients:
No strict recipe with this one, but used a packet of shop bought breaded goats cheese, four large..ish, mushrooms, small jar of tomato sauce - didn't use much of this with my small menu with rocket and a few walnuts and balsamic dressing.
I peeled and cooked the mushrooms in the oven, drizzled with a little olive oil for about 15 minutes, then spooned some tomato sauce into each mushroom and topped with a few leaves of rocket.
I then get my plate ready with some more rocket and walnut pieces.
I then take my breaded goats cheese and fry them gently in a little oil in a pan until golden and place on the top of each mushroom.
Put back into the oven for another 10 minutes and they are ready!
Once ready, place them on top of the salad and drizzle with a little balsamic dressing!
