ROAST JOHN DORY WITH FIGS
One of my favourite fish is John Dory (Saint Pierre) which I don't buy very often as it is quite expensive. But in our local Super U last week I saw two small John Dory for just over 5 euros in a pack. So, how could I resist!
This serves 1 person with a small John Dory
Ingredients:
1 small John Dory
Olive oil
Few black olives
2 fresh figs
2 small stems of fresh Rosemary
Splash of white wine
Lemon wedge
Salt
Method:
Preheat the oven to 350°. Drizzle 1 tablespoon of the oil in a large roasting pan. Set the dorade in the roasting pan. Season generously with salt. Scatter the figs, olives and rosemary over and around the fish and drizzle on the wine and the remaining 3 tablespoons of oil. Roast for about 30 minutes, until the fish just flakes. Serve with lemon wedges.
I served it with a beurre blanc sauce, roasted baby potatoes and rocket (from the garden).
