MOON BLUSH TOMATOES

 MOON BLUSH TOMATOES 

This is a Nigella recipe and she calls them 'Moonblush Tomatoes' (but are similar to sun-dried) from Nigella Express.

 

Ingredients:

500g cherry tomatoes

2 tsps salt

1/4 tsp sugar 

1 tsp dried thyme or oregano 

2 x tablespoons olive oil

Method:

Preheat the oven to 220 degrees

Cut the tomatoes in half and sit them cut side up in an ovenproof dish.  Sprinkle over the salt, sugar, herbs and olive oil.

Put them in the oven and immediately turn it off.  Leave the tomatoes in the oven overnight or for a day without opening the door.


You can then use these tomatoes in so many ways, either store them in a jam jar in oil in the fridge, add to pasta or any salad.
