GARLIC BREAD
This is a Nigella recipe and one of the best. Taken from her 'At My Table' book.
Chilli Cheese Garlic Bread
Ingredients:
100g unsalted butter - must be soft
1/2 teaspoon of sea salt
4 cloves of garlic, peeled and crushed
1/4 tsp of chilli flakes
1 ball of Mozzarella cheese - finely chopped
Baguette
Method:
If you are going to eat this straight away then you will need to preheat your oven to 200 degrees fan.
If not, have some pieces of foil ready to roll into and freeze.
Beat together the softened butter, salt, garlic and chilli flakes along with the mozzerella cheese. I use my small chopper/mixer (Russel Hobs), so basically put everything in and blitz!
Cut the bread into how many slices or pieces that you want, small or big and then spread the garlic butter over each piece of bread. Any leftover butter can be rolled into cling film and frozen or put in the fridge.
Wrap the whole bread or pieces into foil (folding at the top) so that you can unwrap easily.
Bake for approximately 20 minutes - Open the parcel carefully, if the bread is still a bit soft on top, put back in the oven with the foil open and cook for another 5 minutes until crisp.
Remove from the oven, lift the bread out of the foil and serve!
Voila easy 'garlic bread'!!

This is my favourite garlic bread, very 70's/80's but gorgeous! It has always been difficult to buy decent garlic bread here in France, even in Italian restaurants, but in the last few years supermarkets have started to sell them, but to be honest, they are not as good as 'home made' having chunks of garlic spread with butter on thin slices of bread....yuck! And why oh why do they only have it for apero! If I'm having pasta, then it has to have some garlic bread, doesn't it? So obviously, I always make my own, always have done! I always make this when I've bought a baguette which we haven't eaten or have some left and its gone a bit stale. I make the garlic butter and freeze individual pieces wrapped in tin foil, so that when I want one piece it comes out of the freezer and is baked in the oven...simples!
