CRUMPETS!

CRUMPETS!

We love crumpets and its hard to find them in France, unless you shop at some of the English shops. I have tried several crumpet recipes and this is the most easiest of them all.




Makes about 5 crumpets.

Ingredients:

150g plain white flour - I used some strong bread flour to use up and it worked well
200ml water
1/2 tsp salt
1/2 tsp sugar
1 tsp baking powder
1 sachet of dried yeast

Method:

Add the flour, water and salt to a large mixing bowl.
Mix well with a whisk the batter for at least 5 minutes - this is easier done with an electric hand mixer.
Mix the dried yeast with a small amount of water into a paste.
Add the sugar, baking powder and the yeast mixture into the batter mix and mix for another minute.
Cover the bowl and put into a warm place for 15 minutes.

Take the rings for the crumpets and grease the sides well with oil.  Place them into a non-stick frying pan over medium heat.

When the pan and rings are hot, with a ladle carefully ladle into the pan (about 60g) some batter into each ring, about half way up.



Wait for about 4 mins and you will see the bubbles coming to the surface, carefully lift off the rings (if these have been greased well then they should come off easily) and if its still a bit gooey carefully turn the crumpets over to finish cooking. Make sure that the heat is not too hot or the base of the crumpet will burn.



Take out of the pan and cool.

Toast and enjoy with butter or whatever you wish on top; I also like to have mine with cheese.
