EASTER BISCUITS

I love Easter biscuits.  I remember having them a lot when we were little, normally bought from the shop and not home made.

I managed to find some Cassia Oil from Amazon, which does give it the best flavour and the flavour that I remember Easter Biscuits were.







Ingredients:

100g caster sugar
1 egg
1/2 tsp baking powder
80g currants - I had to use sultanas as I couldn't find currants, and had to cut them up small
100g soft butter
250g plain flour
2 tbsps milk - I didn't need to use any milk
1 drop of oil of cassia or 1 tsp of mixed spice if you don't have any oil

I made 23, but depends on the size of cutter you use.

Method:

Heat your oven to 180-190 C (fan).  Line the baking tray with grease proof paper.

Beat the sugar and butter together until soft and fluffy. I used butter at room temperature, so it was easier to beat.

Add the egg and whip until fully incorporated.

Fold in the flour, baking powder and oil or spice.

Gently mix the lot together whilst adding the milk - if you need it.  I found that the butter was soft enough and I didn't need any milk to bind.  You need to have a dough that you are able to roll out.

Lastly, knead in the currants.



Flour your worktop and roll the dough out to around a 5mm thickness.



Using a round cutter, cut out the biscuits and place onto the baking tray, spacing them apart.

Bake until the edges just start to turn golden and they have the tiniest bit of colour underneath - I found that 10 minutes was enough in the oven at 190 C.  But you will need to keep an eye on them.



Once out of the oven, immediately sprinkle with caster sugar and then allow to cool.
