HOMEMADE PIZZA


PIZZA



Every week, usually on a Saturday night, I try to make a pizza.  A very simple one, with not a lot of ingredients as this is what I prefer.  I always make my pizza base myself and using some of the lovely tomatoes that we grow every year in the greenhouse, use these for my tomato paste.  I usually have a stock of this in my freezer which I make during the summer with added basil that we also grow.  I freeze them into little pots which are ready to use for my pizzas.  I have tried all sorts of recipes for the dough and find that this is the best.



Heat oven beforehand at 220 C so it is nice and hot.

Ingredients:

Dough:

175g pizza flour
1 tsp sugar
1 tsp salt
1 tablespoon of olive oil
1 sachet of dried yeast
100ml of hand hot water

I put all these ingredients into my big mixer using the dough hook and process for about 5 minutes.  After this, I place the dough into a greased bowl and cover with cling film to leave to rise for about 1 – 2 hours.





I then roll the dough out into a circle and place on a pizza oven tray.  


  
Place all the filling ingredients that you are using, starting with the tomato puree, then slice up one mozzarella ball and then I sprinkle some more pizza cheese over this and then add a few slices of anchovies.  Finally, I add some fresh basil leaves.  This is my preferred pizza, but you can add whatever you wish!


 
Once your oven is hot, place the pizza in and cook for approximately 20 minutes or so, until you have a nice golden crust.
