PARMESAN BISCUITS

I make these biscuits quite a lot as they are ideal with drinks when friends come to dinner.  You can make up the dough in advance, roll into a sausage shape, cover in cling film and keep in the fridge for up to 3 days until needed before slicing and cooking them.



Ingredients:

150g Plain Flour
75g grated Parmesan
100g soft unsalted butter
1 egg yolk

Put all the ingredients together in the bowl of a processor or electric mixer until it all comes together into a dough and forms a ball.

Turn out onto a surface and roll into a sausage shape, and then place into a piece of cling film and place in the fridge until needed. If you are cooking them straight away, they will need around 45 minutes in the fridge before cooking.




To cook: Preheat the oven to 180 C.

Cut the roll into 1cm thickness for each biscuit.

Arrange on a baking sheet lined with baking parchment and put in the oven for around 15 minutes until they are pale golden.

Leave them to cool and serve.

They are very addictive so won't last very long!
