Ratatouille in the Air Fryer

RATATOUILLE

This is one of the things that I do regularly in the air fryer, very quick and easy!



200g courgettes and/or aubergine
1 yellow pepper
2 tomatoes - I prefer cherry tomatoes - halved
1 onion
1 clove of garlic, crushed
2 teaspoons dried Provencal herbs
Freshly ground black pepper
1 tablespoon of olive oil

Preheat the Airfryer to 200 degrees.
Cut the courgette, aubergine, pepper, tomatoes and onion into 2cm cubes.
Mix the vegetables in a bowl with the garlic, herbs, 1/2 teaspoon of sale and pepper to taste.
Spoon in the olive oil.



Put into the basket and slide into the Airfryer. 




Set the timer to 15 mins and cook.
Stir the vegetables once or twice whilst cooking.
Serve!



The recipe in the book says to put the veg into a small, round bakig dish approx. 16cm diameter, but I tend to put the veg straight into the basket and have found that this also works well.

Last night, I did deep fried brie or 'air fried brie' in the Airfryer and it worked really well, although didn't have such a golden colour as usual deep fried brie, but was just as good!
