I managed to find some really lovely Stilton cheese just before Christmas and so this was one of the things that we had which was really scrummy!
This recipe serves 6, but you can adapt it for just 2 as I did!
Pear, walnut and Stilton Salad
170g Stilton, crumbled
142ml single cream
2 ripe pears, peeled
Juice of 1/2 lemon
90g watercress & rocket leaves
25g walnuts
In a small pan, gently heat 110g of the crumbled Stilton and all of the single cream until the cheese has melted and the dressing is smooth.
Slice each pear into thick wedges and remove the core. Toss in the lemon juice.
Divide the salad leaves between the 6 plates, scatter with the pears, walnuts and the remaining Stilton. Drizzle with the dressing and serve at once.
Stilton is still my favourite cheese despite the large selection that we get here in France. This recipe looks very yummy. Diane
