COURGETTE GRATIN

Courgette Gratin This is a wonderful recipe and always good to find courgette recipes when you have a glut of them in the garden. This recipe was taken from The Hairy Bikers' Mediterranean Adventure cook book and is very quick and simple to do. I have also added some sliced mushrooms to this dish, but you can add other things such as slices of tomatoes.

Chutney and Relish

TOMATO CHUTNEY 1kg ripe tomatoes, chopped 450g onions, chopped 2 garlic cloves, finely chopped 2 eating apples, peeled, cored and roughly chopped 2 tsp mustard seeds 2 cloves 2.5cm piece fresh ginger, grated 300g sultanas 200g light muscovado sugar 1/2 tsp Allspice 600ml malt vinegar Put all the ingredients, apart from the vinegar, in a preserving pan or large, deep saucepan. Add half the vinegar and season. Place the pan over a medium heat. Slowly bring the mixture to a simmer, stirring constantly, until the sugar has dissolved. Simmer for 30-40 minutes, stirring occasionally, until tender. Stir the vinegar into the chutney. Cook for a further 30 minutes, stirring often, or until thickened. If it’s still runny, simmer for another 10-15 minutes. Divide the hot chutney between sterilised jars and set aside to cool. Raclette

So, it's Thursday! And being Thursday it's Mr TK's night to cook! I helped him out a bit by suggesting something quite simple and easy for him to do tonight, no not a frozen pizza as has been done before. A raclette! So what is a raclette and how do we do it? Raclette is both a type of cheese and, informally, a dish featuring this cheese. In French, the word for the cheese is masculine, le raclette , whereas the word for the dish is feminine, la raclette . Raclette is a semi-firm, cow's milk cheese - very good for melting. It is usually fashioned into a round of about 6 kg (13 lb). Raclette is also a dish found in parts of Switzerland and France. The Raclette cheese round is heated, either in front of a fire or by a special machine, then scraped onto diners' plates; the term raclette derives from the French word racler, meaning "to scrape".
