We are still picking rhubarb, so I thought I would try out a recipe that I recently found.
RHUBARB FOOL
700g rhubarb
250g strawberries
225g sugar
Spoonful of water
150g creme fraiche/creme liquid
150g mascarpone

Cut the rhubarb into small pieces, cut the strawberries in half and cook gently in a pan with the water and the sugar. Cook until really soft and leave to cool. Strain the liquid away if too much.
In a bowl, mix the sugar and mascarpone with a hand blender until thick, then add the creme fraiche and beat further until stiff.
Then layer the cream mix and rhubarb mix in a glass.
Sprinkle a little cinnamon or cocoa powder on the top of the glass and place the glasses in the fridge until ready to serve.
