These are amazing! I've never made meringues in the microwave before, so having a lot of strawberries at the moment and not having enough time to cook some meringues in the oven, decided to try something different.
Microwave Meringues in Minutes
300g icing sugar
1 lightly beaten egg white whipped cream , to serve
Fruit of your choice to serve
Sift 300g of icing sugar over 1 lightly beaten egg white. Stir until the mixture is a thick, pliable icing and roll into balls. Line a plate with kitchen paper.
Put 3 balls at a time on the plate and microwave them on high for 1½ mins and watch, in amazement, as the balls balloon and puff into meringues.
When they are cool, use the meringues in desserts. They're perfect for sandwiching together with whipped cream and fruit.
Obviously, they don't look as good as ones made in the oven, but they taste the same and will be fine for Eton Mess!

ReplyDeleteI do make meringues having an Aga helps, but there are times when you need them in a hurry, especially if someone drops in unexpectadly and these sound just perfect, but you give the temp reading for the microwave as high, is that 850, or 1000.
ReplyDeleteMy microwave is 900w and it worked perfectly. I Suppose its trial and error, based on the size of your meringue balls and your microwave. So if your microwave is higher temp, you may want to adjust the timing, maybe only do 1 min. Good luck!
