Having made the mincemeat the other week, I have now made my first batch of mince pies.
PASTRY
200g plain flour
40g caster sugar
75g ground almonds
125g butter
1 egg
Put the flour, caster sugar, ground almonds and butter into a bowl. Then rub in the butter using your finger tips until the mixture looks like breadcrumbs. Then add the egg and a bit of cold water to bind together to form into a ball. Place in a bag and put into the fridge to chill for about 30 mins.

ReplyDeleteI was very pleased with the mince meat that I made, we tried one and they were really lovely and the pastry was so much better than the usual pastry!
