Having stocked up on our supply of apples, which we always buy at St Caradec near Pontivy for the girls, which only costs us just over 4 euros....bargain, I decided to use some of them for us as well, so made us an apple tart today.
FRENCH APPLE TART
First of all you will need some puff pastry, which I normally buy, much easier than trying to make my own! I roll it out on a large baking sheet. I then spread over some apple compote, which I make by peeling and coring some apples, about 5 small ones, into a pan with a bit of butter, cook until mushy and add some sugar and a teaspoon of cinnamon.
I then like to mash it a bit more with a potato masher to make a smoother consistency.
I then spread the compote over the pastry
Then take about four more apples, peeled, cored and sliced place into a bowl with a teaspoon of sugar and some lemon juice and lay on top of the compote.
Then fold up all the outside of the round to keep the filling in.
Then add a few pieces of butter to the top of the tart.
Put in the oven for about 20 to 30 minutes until golden.
When cooked, take out of the oven.
Then put about 2 or 3 tablespoons of apricot jam into a saucepan and cook until liquid and then brush this over the top of the tart.
Et Voilia.
Serve with Creme Fraiche!
