Courgette Lasagne

For tonight's dinner, I decided to try and use up some of the many courgettes that I have at the moment, so it was a 'veggie' meal for us both tonight!  We also had a very 'small' starter of  Tomato and Orange Soup which we both really enjoyed, I'd forgotten how lovely it was, as hadn't made it since last year.  You will find the recipe for this under my 'Soups' section.  I am going to make some more and try freezing it, so hope it will be just as nice after it's been frozen.



COURGETTE LASAGNE

Olive oil
2 large courgettes , grated
1 clove garlic , crushed
a pinch of chilli flakes
½ 250g tub ricotta
3 tbsp Parmesan (or vegetarian alternative), grated
300ml jar tomato pasta sauce - or make your own as I did with fresh tomatoes!
6 sheets lasagne - I used the dried sheets
Half a tub of creme fraiche plus extra grated cheese for the top


Heat the oven to 190C/fan 170C/gas 5. Heat 1 tbsp olive oil in a pan. Cook the courgette, garlic and chilli until soft. Add the ricotta and 2 tbsp of parmesan, season and mix well.

Put a layer of the mix in the bottom of a small dish. Add a quarter of the sauce then cover with 2 sheets of lasagne. Repeat twice, ending with lasagne. Spoon over the last 1/4 of tomato sauce and top with a bit of creme fraiche (which I heated slightly in a small pan before pouring over the top and then sprinkle over the Parmesan or any grated cheese. Bake for 30-40 minutes until bubbling.
