Yes, the meal turned out wonderful, except for Mr TK's photography that is! As I left him in charge of the camera, he was the one to take a shot of each dish...umm! I've had to do a search for some photos as the shots that he took were far too blurred to put on here! So, was it a case of too much Champagne??? Well, there's only one solution and that's to buy some more oysters and try again...with me in charge of the camera this time!
So, we started off with an apero of half a bottle of Champagne....lovely!
Mise en bouche.....chilled cucumber soup...well it had to be didn't it!
CHILLED CUCUMBER SOUP
Cucumber - peeled, seeds scouped out and diced
1 small shallot - finely chopped
1/2 pt of stock (veg)
Creme fluid
Mint - chopped
To garnish - sliced cucumber and sprinkled with cayenne pepper
Sorry, no actual measurements here!
Cook the shallots in oil, gently for a couple of mins. Add the chopped cucumber, cook for about 5 mins, add the stock and cook for another 5 mins or so, then add the cream and mint and then blend with a hand blender. Left to cool, then I placed it in the fridge until ready to serve. Place in small glasses and garnish with slices of cucumber and cayenne!
Then we had:
GRILLED OYSTERS WITH PARMESAN
Open the oysters - we had 20 oysters, so 10 each!
Lay the oysters onto a baking tray. On each opened oyster, add a tsp of melted butter, grind of black pepper, tsp of cream and then sprinkle over the parmesan. Grill for about 10 mins until golden! Serve with an excellent bottle of white!
As I said, these aren't the actual oysters that I cooked, but you get the idea of what they look like!
Main course for Mr TK:
Faux fillet - steak
Garlic mushrooms
Roasted tomato
Haricots verts
Bearnaise sauce
Prawns
Chips!
This was washed down (by Mr TK I might add!) with:
A nice bottle of red!
Followed by a creme caramel - sorry forgot the photo!
So yes, I think he enjoyed his meal - well, he did chose what he wanted to eat!
I have already eaten tonight and had 1/2 a bottle of wine. Now I have seen this, I want to start all over again, all my favourites :-) Diane
