My Minestrone Soup

This is a soup that varies everytime that I make it, depending on what I have to hand at the time.  So this is my take on:-

MINESTRONE SOUP

No exact measurements here, so just put in what you feel:

Olive oil
1 onion - chopped
3 sticks of celery - chopped
1 courgette - chopped
good handful of broadbeans
a couple of good handfuls of spinach - thickly sliced
1 large carrot - chopped
1 clove of garlic
2 tsps of tomato puree
2 big tomatoes - sliced
Haricots verts
1 litre of veg stock
Parsley - chopped
Pasta - you can use any small soup pasta or cut up spaghetti
Salt and pepper

Heat the oil in a large pan, add the chopped onion and garlic, carrots, celery, broadbeans and cougettes.  Cook on low heat for about 5 mins.  Add the sliced tomatoes and tomato puree, then pour in the litre of stock.  Bring to the boil and simmer for about 15 mins, then add the thickly sliced spinach, cook for another 5 mins.  Add the pasta - and simmer for another 10 mins or so.  I also like to add (if I have it) the end piece of a block of parmesan, instead of throwing it out, add it to a soup for extra flavour - not forgetting to take it out before serving.

Serve with spinkling of parmesan over the top and fresh baguette!
