This is the only fish pie recipe that I ever make! The recipe comes from Jamie Oliver and is fantastic and so easy to do. I like to do this when I have some really nice fresh spinach in the garden, but you can use frozen as well.
I tend to use whatever different types of fish I have in the freezer at the time, and always like to add a few prawns in it.
FANTASTIC FISH PIE
6 large potatoes, peeled and diced
2 eggs
2 large handfuls of fresh spinach
1 onion, finely chopped
1 carrot, halved and finely chopped
1 little extra-virgin olive oil
1/2 pt cream - or creme fluid
2 good handfuls of grated cheddar cheese - you can use any cheese, but I think it needs cheddar!
handful of chopped parsley
juice of 1 lemon
1 heaped tsp Dijon mustard
450g haddock, salmon, cod or other white fish, skinned, boned and sliced into strips
Prawns (opt)
salt and pepper
Nutmeg
Preheat the oven.
Put the potatoes into a pan of salted, boiling water. Bring back to the boil for 10 minutes.
At the same time, hard boil the 2 eggs.
Steam the spinach in a colander over the pan that has the potatoes.
This will only take about a minute.
When the spinach is done, remove from the colander and squeeze out excess water.
Remove the eggs from pan.
Cool under cold water and peel and quarter them.
Put to one side.
Drain the potatoes in the colander.
In a separate pan, slow-fry the onions and carrots in a little olive oil for about 8-10 minutes.
Add the cream and bring just to a boil.
Remove from the heat and add the Cheddar cheese, lemon juice, chopped parsley and mustard.
Put the spinach, fish and eggs in an decent sized casserole dish and mix together.
Pour over this mixture the creamy vegetable sauce.
Mash the cooked potatoes - adding a bit of olive oil, nutmeg, salt and pepper. I use my 'ricer' as I find I get a better consistency, but you can use a potato masher.
Spread the potatoes on top of the fish, and sprinkle with extra cheddar cheese.
Place in the oven for 25 - 30 minutes.
Bake at 450 degrees.
I like to serve this with peas and also goes really well with my 'Homemade Tomato Sauce'!
