Coleslaw!

I was fed up with buying a small tub of supermarket coleslaw that didn't really taste of anything in particular, so I now make my own, much nicer and at least it's fresh!  I've been making this for quite some time now, and always seem to alter it according to what I have in the fridge.

But the basic recipe is as follows:-

COLESLAW

White cabbage shredded - I tend to use about a 1/4 of a cabbage each time I make it, but if you want to make more, add more!
2 small onions - green or red - shredded/chopped
2 carrots - shredded/chopped

I also like to add:-

Celery - chopped
Chopped pineapple or some sultanas
Finely chopped parsley

Dressing:-

Mayonnaise - I just add it what I think and don't measure, obviously you don't want too much or there will be too much sauce
1 tbsp sugar
1/2 tsp salt
2 tbsps of cider vinegar
Black pepper
1 tbsp of grain mustard
1 crushed garlic clove
Prepare all the main ingredients, and place into a big bowl.  Then in a separate bowl mix all the dressing ingredients together.  Add to the other bowl and mix well. Adjust seasoning to taste.  Et voila!  It should keep in the fridge for up to 4 days.
