Fish Recipes

I am a vegetarian, but I do love and eat fish so enjoy finding lots of different things to do with fish as well as vegetables.  Here are some of my favourite dishes that I like to do.

SMOKED SALMON PASTA BAKE

This is a very quick and very simple week day meal that we often have. I can buy smoked salmon really cheap here, roughly about 2 euros, so this is excellent value!  I like to use fresh pasta for this dish, so a packet of fresh (cheap) taglietelli is ideal, but you can also use dried if you prefer.  I don't actually stick to these measurements, but this gives you a good idea.  I also use a 'ready grated' mixture of emmental and mozerella cheese for this, but you can use whatever mixture cheese that you prefer. 

400g pasta
salt
300g grated cheese - gruyere or cheddar
2 tbsp chopped fresh dill (or dried if you don't have fresh)
200ml creme fraiche
1/2 tsp cayenne pepper
25g butter
250g smoked salmon

Preheat the oven to 200 c.  Cook the pasta in plenty of boiling salted water until tender, but still firm to the bite.  Drain and return to the saucepan.  Set aside some of the cheese for the topping.  Mix the rest of the cheese into the pan along with the creme fraiche, pasta, dill and cayenne pepper. 

Grease an ovenproof dish with half of the butter.  Spoon in half of the past mix.  Lay the smoked salmon on top and cover with the remaining pasta mix. Sprinkle over the remaining cheese and dot with the remaining butter.  Cover with foil then bake for 15 mins.  Remove the foil and bake for a further 5 mins until the top is bubbling and golden. 

Lovely served with salad and fresh 'French' bread.

I also like to add a bit of fresh spinach to this dish, after layering with the smoked salmon, I then put a layer of the spinach on top before adding the rest of the pasta.
